Every morning French bakers begin working before the first light of day, preparing a selection of croissants, brioches, crusty breads and the star of French meals, baguettes.

I remember walking with my dad early in the morning to the closest bakery to our home to get our bread for the day. He would ask me what I wanted, and I would guiltily stare at the wonderful display of freshly baked puffs and pastries, wondering if I should get the one with the chocolate, the raisins or a simple brioche topped with sugar.

I grew up on homemade meals and baking in the afternoon with my mom and sisters. We often ate out at restaurants, too, which is a common practice among French families with little children. My parents were friends with various chefs, who gave me insights of what working at a restaurant was like. The restaurants had huge kitchens with a separate area for desserts. They had a room for chocolate only, where the temperature wouldn’t rise above 21degrees.

Confectioners are the first to arrive, and they prepare every component that is used to make the sweets. They are also the last to leave, cleaning up after last customers finish their desserts.

My first full-time job in Japan was at a bakery. Bakers worked precisely and with devotion in order to make each piece perfect. Nowadays, well-known French bakers and confectioners view Japan as a highly skilled scene full of passionate and creative chefs.
